Strawberry Amaretto Cobbler

We've got a special treat or you this week! It's time to celebrate with some strawberry amaretto cobbler, thanks to Board Member Norman McClure.


Ingredients:

2 1/2 cups fresh strawberries 

1/2 cup sugar 

1/2 cup Amaretto 

1/4 teaspoon Jamaican ginger 

1/4 teaspoon pure vanilla extract 

1 cup all-purpose flour 

1 cup sugar 

3/4 cup milk 

1 teaspoon cinnamon sugar 

1 stick butter


Directions:

  1. In a large glass bowl combine sliced strawberries, 1/2 cup sugar, Amaretto, ginger and vanilla, stir well to coat strawberries. Cover bowl, set aside for approximately 20 to 30 minutes to marinate.

  2. Melt butter in the bottom of a 9x13 baking dish.

  3. In a separate bowl combine flour, 1 cup sugar, milk and cinnamon sugar. Mix well. Pour mixture into baking dish over melted butter - do not stir. Spoon strawberries evenly over batter. Pour juice from strawberries over dish.

  4. Bake in a 350° oven for 45 minutes.

  5. As soon as cobbler comes out of the oven, sprinkle 2 tablespoons of sugar over top.

  6. Let cool a bit.

  7. Serve as is or top with whipped cream or your favorite ice cream.

Servings: 6 to 8 servings
