Summer is coming up fast and that brings so many great veggies and fruits to harvest! Why not make up a comforting stew for those rainy days ahead. Thanks to Board Member Norman McClure for sharing this one with us.
INGREDIENTS:
4 thick slices of bacon, sliced into pieces
1 medium or large Vidalia onion, diced
1, 28-oz can diced tomatoes
1 1/2- 2 lbs. fresh okra, sliced
2 cups chicken or vegetable stock
Pinch of salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground garlic powder
1/2 teaspoon Creole seasoning
Cooked rice (optional for serving)
DIRECTIONS:
Over medium heat, sauté the bacon pieces until browned. Remove the cooked bacon and reserve for garnish.
Add the diced onion to the bacon fat and sauté for 2 to 3 minutes until softened.
Add the canned diced tomatoes with juice, sliced okra, stock and seasonings. Stir to combine.
Lower heat to simmer, cover and cook until okra is tender 20 to 30 minutes. Do not overcook.
Top with reserved bacon pieces. Serve hot as a side dish or over cooked rice
