Start the new year with a new type of muffin! This yummy looking recipe was sent to us by Federation Secretary, Shirley Bodiford.
Ingredients:
10 oz. chopped broccoli
1 stick melted margarine
1/2 teaspoon salt
1 medium onion, diced
1 bag shredded cheese
6 eggs
1 box Jiffy cornbread mix
Directions:
Mix all ingredients together.
Spoon into mini-muffin pan.
Bake at 350 degrees for about 20 minutes or until golden brown on top.
Cool completely and can freeze these until later.
